How much success could I have pheasant hunting WITHOUT a dog? Is a dog critical or just a luxuary?

That is a very difficult question because of all the variables involved,..public or private land, by yourself or in a group how big of a group!

The short answer is yes you can successfully hunt pheasant without a dog,...generally though you will be much more successful with a good, well trained dog.

the most common way to hunt without a dog would be to get a large group and do a drive through cover with blockers posted at the end and the sides.

Speaking from experience, I have had my best luck starting at the edge of the field and winding my way into the center. No doubt it is tougher with only one or two people.

I have had to hunt by myself or with one other guy for a long time, you need to stop and go really push the heavier cover and not work the field too fast your trying to corner the birds and get them nervous to fly. Generally a pheasant will run or freeze first before it will fly, it has to feel cornered to get it in the air.
